Happy National Homemade Cookie Day!

October 1st is National Homemade Cookie Day, and we’re celebrating National Homemade Cookie Day over here at Simplay3 with three easy recipes that little ones are sure to enjoy. They can even safely join in on the baking process with our Toddler Tower Adjustable Stool or Folding Step Stool.

Chocolate Chip Cookies

Ingredients:

  • 2 ¼ cups of all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup unsalted butter
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups chocolate chips

Directions:

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each. Mix in vanilla.
  5. Gradually add the dry ingredients, mixing until combined.
  6. Fold in chocolate chips.
  7. Drop rounds of dough onto prepared baking sheets, spacing about 2 inches apart.

Peanut Butter Cookies

Ingredients:

  • 1 cup smooth peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Directions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine the peanut butter and sugar, stirring until well blended.
  3. Add the egg, vanilla extract, baking soda, and salt to the peanut butter mixture, and mix until everything is fully incorporated.
  4. Use a tablespoon to scoop the dough, and roll it into balls, placing them about 2 inches apart on the prepared baking sheet.
  5. Flatten each ball slightly with a fork, making a crisscross pattern on the top.
  6. Bake in the preheated oven for 10-12 minutes, or until the edges look set and just starting to brown.
  7. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Sugar Cookies

Ingredients:

  • 2 ¾  cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 ½  cups granulated sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • ½  teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ¼  teaspoon salt
  • Extra sugar for rolling

Directions:

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Mix together the dry ingredients – flour, baking soda, baking powder, and salt.
  3. In a separate bowl, beat butter and granulated sugar together until light and fluffy.
  4. Incorporate the egg and pure vanilla extract into the butter-sugar blend, mixing until the liquid ingredients are fully integrated.
  5. Gently fold the dry ingredient mixture into the wet ingredients, stirring minimally.
  6. Shape the cookie dough into 1-inch balls, then coat each ball with a layer of granulated sugar.
  7. Arrange the sugar-coated dough balls on the prepared baking sheets, maintaining sufficient spacing to allow for slight spreading during baking, and delicately flatten each ball using the bottom of a glass.
  8. Bake the cookies for 8-10 minutes, then allow them to rest briefly on the baking sheet before transferring to a cooling rack.
